How to use Xanthan gum to make Gluten Free Chicken & Cheese Quiche
Ingredients:
Crust:
2 Cups Gluten Free flour
2 tsp USA FLAVA Xanthan Gum
½ tsp salt
½ cup butter
1 egg
½ cup cold water
Filling:
3 tsp Dijon
½ Cup cooked chicken (rotisserie)
1 onion (sliced)
2 eggs
1 cup cream
Salt and pepper to taste
2 cups shredded gouda cheese
Directions:
1. In a bowl mix, flour, xanthan gum and salt. Add in your butter and mix them using a fork or a pastry blender until crumbly in texture. Stir in your egg and water gradually until consistency becomes doughy. Don’t knead too much to remain flaky and refrigerate for 30 mins.
2. In a pan, saute onions for a minute and add in the chicken. Transfer to a bowl and add in the rest of the ingredients. Mix very well until the egg is scrambled enough.
3. Flatten your pie crust and place in an oiled pie tin then pour in your chicken mixture.
4. You can add more gouda cheese on top and then bake for 30 mins in a 350 degree F oven until set.
