How to use Xanthan gum to make Gluten Free Vanilla Cake
Ingredients:
240 grams gluten free flour
1 tsp USA FLAVA Xanthan gum
150 grams white sugar
2 tsp baking powder
2 tsp baking soda
50 ml Vegetable oil
300 ml Almond Milk
2 tsp lemon juice
2 tsp vanilla
Frosting:
400 grams coconut cream
1 cup powdered sugar
2 tsp vanilla
Directions:
1. Mix your vegetable oil, almond milk, lemon juice and vanilla and then add in your gluten free flour, xanthan gum, sugar, baking powder and baking soda until no lumps appear.
2. Pour into a round or square cake pan and bake in a 355 degree F oven for 35 minutes.
3. Cool cake on a rack and make your frosting.
4. Whisk the coconut cream, powdered sugar and vanilla until fluffy and then smoothen the frosting around the cake. Garnish with berries or any fruit as desired.
