Mixed Green Salad With Lemon Vinaigrette

How to use Xanthan gum to make Lemon Vinaigrette




Ingredients


Dressing:

  • 1/2 cup Lemon Juice

  • 3 Tbsp Cold Water

  • 1/4 tsp USA FLAVA Xanthan Gum

  • 1/2 Cup Grapeseed Oil

  • 1/2 Cup Olive Oil

  • Salt and Pepper to taste


Salad:

  • 4 Cups Mixed Greens

  • 1/4 Cup Cherry Tomatoes

  • 1/4 Cup thinly sliced Red Onions

  • 1/2 Cup Shredded Carrots

  • 2 Tbsp Sunflower Seeds




Recipe

  1. To Make your dressing blend lemon juice and cold water in a blender at low speed and add in the Xanthan Gum until slightly thickened.

  2. Increase speed and slowly add in your olive oil and grapeseed oil until creamy then season with salt and pepper.

  3. To assemble your salad, lay your mixed greens on a platter and then top with your cherry tomatoes, onions and carrots.

  4. Add the dressing on top and toss or have the dressing on the side then garnish with the sunflower seeds and serve.
